These are general questions which would help me with some decision making regard a big project. Thank you in advance for your help.
General Project Description: An archive for historical documents, photographs, lists, files (* PDF and others) which will be searchable according to fields / categories / tags etc. This is something like a library/museum database. - This project is conducted by an NGO for educational proposes.
On the face of it this is something that even K2 can do using "extra fields" but I am afraid it might grow more complex and I would need a suitable system.
1- I am sure SEBLOD can easily manage the extra fields but to what degree do you think I would need customization especially on the search plugin?
2- The system will need to support a huge database (thousands of entries) - do you think Joomla+SEBLOD is the way to go about it or should I invest my time learning a new system?

Thank you for your post and welcome to SEBLOD forum.
I would start by saying that you make the right choice by choosing SEBLOD. You can implement the features you described by defining a content type called "Media".
The content type "Media" can contains fields: Media Title, Media Type (image, document, video, ...), Media Description, Media Image, Media File, Media Video and any other field you want to describe precisely what you want.
We implement this solution for some projects like: Ge Destributed Power, Ecologic France, ...
We advise to take a VIP premium package to have a complete access to SEBLOD Store, to a private forum and one hour of support.

For your performance question - this forum itself is built with Seblod only, currently it has 11767 Posts and 4213 Users and as you can see by yourself performance is ok.

I am very impressed with SEBLOD.
However, I am still trying to get familiar with its features and how to use them. I must admit that it isn't easy, while it isn't hard if you get the heck of it.

If you want you can take a support package or training session to ask one guy of the team all questions you want.
By experience, with training sessions you can move forward quickly.
